Avgolemono
Avgolemono is a Greek soup involving lemon juice and rice, usually thickened with egg yolks. Its consistency varies from near-stew to almost a broth.
One recipe involves boiling the rice in chicken stock, then thickening the results with egg yolks, flavoring with lemon juice, then serving with a parsley garnish.
