Bettarazuke
Bettarazuke (べったら漬け) is a kind of pickled daikon popular in Tokyo. It is made by pickling daikon with sugar, salt, and sake without filtering koji. Its name is taken from stickiness of koji leftover from pickling proces. Bettarazuke has a crispy sweet taste.
On the night of every October 19th in the area around Takarada shrine , Bettara Ichi, lit. bettara fair is held to sell this year's freshly pickled bettarazuke.
