A hatchery is a man-made farm for fish, used to cultivate and breed a large number of fish in a enclosed environment regulary as opposed to going out and finding the fish naturally.
It usually involves manual labour; a hatchery worker will take a female salmon, release her eggs, and then externally add the male salmon's sperm, mix them and allow them to fertilize and incubate undisturbed, where there is no risk of disease or risk of being eaten. They can immediately dispose of any unfertilized eggs. In a matter of weeks, making salmon available for sale in great numbers even when the fish are out of season.
