Knafeh
knafeh (Arabic كنافة), also pronounced "kunafah" or "kunfeh," is a kind of sweet made of pastry, cheese, and syrup. The city of Nablus is most famous for this kind of sweet.
Knafeh is mainly one of two types:
- khishneh (Arabic خشنة) "rough": this looks like long thin threads.
- na'ama (Arabic ناعمة) "fine": this pastry is in small pieces.
The pastry is heated with some butter or margarine for a while and then spread with cheese and more pastry; or the khishneh kunafah is rolled around the cheese, and after that the syrup consisting of sugar and water and a couple of lemon juice drops is poured on toit.
