Vibration theory
According to this theory the sensation of smell arises from the nose's sensing of the rate of electron tunneling into the scent molecule. This rate will show resonances with the liquid-state vibrational spectrum of the molecule. Some evidence supports this model, while some evidence supports the 'lock and key' mechanism.
