Sensory adaptation is when your brain stops noticing a constant smell, sound, or feeling over time.
Think of it this way
You walk into a kitchen and smell fresh bread baking. At first, the smell is strong and fills the whole room. After a few minutes, your nose stops sending signals about it. The smell is still there, but your brain has tuned it out.

Walk into a room with a candle burning. At first the smell is strong. After a few minutes, you stop noticing it. Your nose still works, but your brain pays less attention to smells that stay the same.
