Does soy milk contain the same sugar as cow's milk? Extract lactose (milk sugar) from three types of milk and weigh what crystallizes out. You heat low-fat milk, powdered milk, and soy milk with acetic acid to remove the protein. Then you add ethanol to the remaining liquid and let it cool slowly. As each solution cools, lactose crystals form at the bottom. Weigh the crystals from each type. Fresh and powdered milk yield nearly the same amount, but soy milk produces almost three times less.

Hypothesis

The hypothesis is that between low fat milk, powdered milk and soya milk, soya milk will contain the lowest amounts of lactose carbohydrates.

Method & Materials

You will measure the levels of carbohydrates in different types of milk by boiling the milk, adding acid and calcium carbonate, and then filtering the solution. You will then measure the amount of lactose crystals formed.
You will need 100 ml of low fat milk, 13g of non-fat powdered milk, 100ml of soy milk, 3 beakers, 1 hot plate, 1 thermometer, 1 bottle 10% acetic acid, 1 stirring rod, 12 grams of calcium carbonate, water, 6 pieces of filter paper, 300ml of ethanol, 3 Erlenmeyer flask and 1 digital weighing scale.

Results

The results showed that fresh milk and powdered milk contain almost the same amount of lactose carbohydrate, while soy milk contains almost 3 times less lactose. This proves the hypothesis to be true.

Why do this project?

This science project is interesting because it allows us to explore the different levels of carbohydrates in different types of milk. It also shows us how milk can be processed and used to make dairy products.

Also Consider

To improve the accuracy of the results, you can test various brands of the same type of milk. You can also repeat the experiment by comparing the lactose content of milk from cows, goats and sheep, or by using different brands of baby formula milk.
